Gone are the days of dry and bland protein pancakes, this recipe is so light and fluffy, the secret of course is cottage cheese

Ingredients
  • 1 tsp salt
  • 1/2 cup low fat cottage cheese
  • 1 tsp vanilla extract
  • stevia to taste
  • 1 1/4 cup mixed berries
  • 1/2 cup rolled or quick oats
  • 1/2 tsp ground cinnamon
  • 2 whole eggs
Directions
  1. Blend oats, eggs, cottage cheese, cinnamon, salt, vanilla, and (optional) sweetener in a blender.

  2. Spray a pan over medium heat with nonstick spray.

  3. Pour 1/4 cup of batter into pan and cook for about 2 minutes, or until lightly brown - flip and cook the other side.

  4. Top with any topping you like, berries, melted nut butter, toasted coconut, etc.
